Well if the white didnt go over the line then we wouldn't perceive it as a triangle/square or whatever shape. It demonstrates this with the star. When you see it you do not automatically see the star

This uses a principle called closure, and although it's not as trippy as the other illusions, it's still quite interesting to think that our mind automatically perceive familiar images this way.
